Fried Chicken, Brussels Sprouts and Salad

For dinner, I made Fried Chicken Thighs in my Deluxe Air Fryer, Morgan made Roasted Brussels Sprouts with Bacon on our Stone Bar Pan, and Sophie tossed together a Salad to go with it.

Pizza & Sausages

For dinner, I made a crispy Roasted Vegetable Pizza on a Cauliflower Crust with Apple and Gouda Chicken Sausage. I cooked the sausages in our Deluxe Air Fryer and pulled the pizza from the oven using our Pizza Peel. Both were tastier than I remember. Thanks, Costco!

Carrot-Ginger Soup with Grilled Cheese

For dinner, I made a Pampered Chef Recipe called Carrot-Ginger Soup. I’ve shown the recipe in some virtual parties, but this was my first time trying to make it. Chop up carrots in chunks (about one inch), Add the ingredients into the Deluxe Cooking Blender, and push the “Soup” button. Viola! Out pops steaming hot soup in no time! I made a grilled Cheese Sandwich to go with it.

Grilled Chicken Sandwich

I had a Grilled Chicken Sandwich and Fries for dinner. It was tastier than I thought it would be.

Beer-Battered Cod with Tater Tots & Peas

For dinner, I popped some frozen Beer-Battered Cod, and thawed Tater Tots into our Deluxe Air Fryer, and in 17 minutes, Ba-BAM! Dinner was served. Sophie made Peas to go with it.

Baked Pork Loin with Brussels Sprouts

For dinner, I made a Buttery Baked Pork Loin, and I think it may be the juiciest one I’ve ever made. I loved it. Sophie steamed Brussels Sprouts and a salad to go with it. I included leftover Couscous for me and added pecans to the salad. I also tossed in a few dried Cranberries to the both the salad and couscous.

Air Fried Chicken & Beets

For dinner tonight, I fried some Chicken Thighs and opened a jar of Beets we picked up at Costco. Morgan made stuffing, and Sophie made Broccoli.

Scaloppini Marsala

I had an amazing meal for dinner tonight. Scaloppini Marsala with Green Beans, Mashed Potatoes and a Insalata Mista.

Homemade Broccoli Beef-Plus

For dinner, I made a new recipe we found online, and it was amazing! We based our meal off of an Easy Beef and Broccoli recipe we found by Kelly Senyei of Just a Taste. We made it our own by using the meat we had on hand, Sirloin and additional vegetables, and we cooked it in our Nonstick Stainless Steel Wok. I served mine over Brown Rice.

Mid-Week Leftovers

I chose leftovers for dinner tonight. I ate a Tri-Tip, Asparagus, Garlic-Roasted Vegetables, White Cheddar Mashed Potatoes, a tiny piece of leftover Salmon and a bowl of Salad.
